Here is a great summer meal to enjoy with your family and friends. It’s easy to prepare and great for cookouts.
Family Summer Fun Fajitas

Serves 4 to 6
- 1 Pound boneless, skinless chicken breast
- 1 Red bell pepper
- 1 Green bell pepper
- 1 Sweet onion
- 1 ½ Cups shredded Mexican cheese
- 1-2 tablespoons of olive oil
- 8-8" flour tortillas
- ¼ cup prepared mesquite marinade
- Sour Cream
- 1 cup prepared salsa
- Fresh Cilantro

Step 1Plan ahead by marinating the chicken in a mesquite marinade for at least 3 hours. Place the chicken breasts in a plastic bag with enough marinade to coat all of the chicken and refrigerate. |
Step 2Cut the onions and peppers into strips about ¼ inch wide. |

Step 3Sauté the onions and peppers with the olive oil in a pan. Always be careful when cooking with hot oil. |
Step 4Wrap the tortillas in aluminum foil and place on an upper rack of the grill until warm. Grill the chicken breasts over medium heat. Be sure the chicken is completely cooked before removing from the grill. |

Step 5Slice the cooked chicken into small strips about ½ inch wide. Spread about a tablespoon of sour cream on a tortilla, sprinkle with cheese, add a few chicken strips, some pepper, onion, cilantro and salsa. |
Step 6Roll the tortilla about 2-3 inches around. Serve with a salad and you are ready to enjoy! If you like, low fat cheese and low fat sour cream can be substituted. |
